SUMMARY:Christmas Drinks In The Snakepit with Liam Ganley
DESCRIPTION:Celebrate the season with the Irish Australian Chamber of Commerce at our annual Christmas Drinks.   Join fellow members and guests for an evening of festive networking\, welcome drinks\, canapés\, and year-end celebrations as we reflect on another successful year and look ahead to 2027.   About Liam Ganley: Shaped by his Irish upbringing\, Chief Publican Liam Ganley’s approach to hospitality embodies the tradition of céad míle fáilte\, meaning “a hundred thousand welcomes” in Gaelic. For him\, this phrase is a way of operating: creating venues that feel graceful\, instinctive\, and generous\, with service that makes people feel at home.   The expression acts as the foundation for the entire Ganley Group portfolio\, which includes four of Victoria’s most loved venues: The Fifth Province and Freddie Wimpoles (St Kilda)\, Angus & Bon (Prahran)\, and The Bay Hotel Mornington (Mornington). Each is housed within a heritage building with architectural character and a layered history\, carefully restored and preserved to serve the local community.   Hailing from Clarinbridge\, a small village on the west coast of Ireland in County Galway\, Ganley emigrated to Australia at age 24. With a background in construction and heritage restoration\, he has an instinctive understanding of buildings\, detail and the role pubs play in community life.   Drawn to Melbourne’s vibrant hospitality culture\, coffee scene and neighbourhood venues\, Ganley saw a future that brought together his construction experience with the warmth of the pubs he had grown up with.   His first hospitality venture was Lemon\, Middle & Orange\, a Collingwood café opened with his now-wife\, Mags. Located in a former paint factory on Rokeby Street\, the café offered an early indication of what would later become a defining feature of Ganley’s approach: a preference for spaces with history\, character and the potential to serve a new purpose.   Within months\, Ganley began looking beyond the café model. In 2014\, he opened The Fifth Province in St Kilda\, bringing his personal interpretation of Irish hospitality to Melbourne. The venue became the foundation of Ganley Group and recently celebrated its twelfth anniversary.   His construction background continues to play a significant role in the group’s evolution. Having worked in heritage restoration early in his career\, Ganley is closely involved in how venues his restored\, reworked and brought back to life with particular attention to the details that shape the guest experience\, from lighting and acoustics to seating\, flow and materiality.   “One of the things I have always cared about is how a room feels\, ” says Ganley. “The guest experience is often shaped by details that seem insignificant on their own: the height of atable\, the density of the foam in a banquette\, the colour temperature of the lighting\, the acoustics of the room\, or even the placement of a footrail. Individually\, these elements may go unnoticed\, but together they create a sense of comfort and ease.“   Irish hospitality has manifested\, in its own way\, in every Ganley Group venue\, through a distinct feeling of warmth\, generosity and service that makes guests feel at home. “A big part of this philosophy comes down to culture. We focus heavily on creating environments where staff genuinely enjoy coming to work\, because we believe the customer experience is a direct reflection of the team behind it\, ” he adds.   As the group grows\, Ganley remains focused on building venues that retain their individuality while sharing a consistent commitment to hospitality\, quality and culture. The recent acquisition of The Windsor Castle Hotel (Windsor) and The Carlton Club (Melbourne CBD) to the fold reflects his passion for preserving character-filled venues with history\, scale and long-term potential\, and plans for their restoration are in tow.   Guests will enjoy welcome drinks and canapés on arrival\, with a paid bar available for additional beverages throughout the evening. Raise a glass with Chamber members\, partners\, and friends as we celebrate the festive season in great company.
